Today I had a meeting at a Chinese buffet and I was taking the kids with me. I knew that the smells would provoke them to want some. I however, didn't want that trash. I wanted nothing more than to stick to my plant-based diet. I am completely convinced that God intended for our bodies to both want and need plants. Since I have started this life-style, I have found it best to cook all of my own food so that I can know what is in it. With that being said, I will cut to the chase with what I decided to cook. I only had about thirty minutes before needing to leave for this meeting and this quick ass vegan meal came to mind.
Total time: 15-20 minutes
Tater tots first!
Indgredients:
I just get some vegan frozen ones from the store and throw them in my air fryer for 15-20 minutes. I do this before I start my burger so they can get done around the same time.
Portobello Mushroom Burgers
Indgredients:
Portobello mushrooms of course
Burger seasonings of your preference
Coconut Oil
(optional -
Red onions
Plum tomato
Swiss Chard/Arugula mix
Avocado
Sometimes, I even like to slice a potato and fry it up and put it on my burger, but I didn't have time for that.)
Part of why people have a hard time maintaining a vegan lifestyle is because it is not quick and convenient like all the foods they are use to. It takes preparation and planning. However, I didn't have time for that either, I had to get to my meeting!
I sliced my mushrooms in half but you can leave them whole if you have time for that. Using a little skillet pan, you heat up 1/2 a tbls of coconut oil and fry or grill it up like you would a burger but in half the time. Season with your preferred seasons and also, some things to add would be some liquid smoke or Worcestershire sauce while the mushroom is cooking.
Next you want to dress the bun in between time, however you like it. I may sometimes put some veganaise on it but I didn't this time. Also, I consider bread processed and bad so I really try to stay away from it...but it is my weakness. I every blue moon cave to the optional bun. I prefer non gluten buns if I don't decide to eat it with just romaine or kale leaves. Now don't go looking for some special item at the grocery store called 'Kale leaves". I am talking about just the regular leaves of kale greens. Organic if you must.
So by the time you have flipped your burger a few times for perfection and get your bun dressed your way, you should be able to pull out those tater tots at the same time and dig right in. My children still ate that horrible meat ridden buffet but I let them choose their own fate, for now. I truly have enjoyed my meal.
